Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 cup apple cider
- 1/4 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- Oil for frying vegetable or canola
- For the glaze:
- 1 cup powdered sugar
- 2-3 tbsp apple cider
- For the filling:
- 1/2 cup apple butter
- For the sugaring:
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
Instructions:
In a large mixing bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice
In another bowl, mix together apple cider, buttermilk, melted butter, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; a few lumps are okay
The dough will be soft
On a floured surface, roll out the dough to about 1/2-inch thickness
Use a doughnut cutter or a round cookie cutter to cut out doughnut shapes
Use a smaller cutter to cut out the center holes
Heat about 2 inches of oil in a large, heavy-bottomed pot to 350F 175C
Carefully place the doughnuts in the hot oil, a few at a time, and fry for about 2 minutes per side, or until they are golden brown and cooked through
Remove with a slotted spoon and drain on paper towels
In a small bowl, whisk together powdered sugar and enough apple cider to create a thick but pourable glaze
Dip the cooled doughnuts in the glaze, allowing any excess to drip off, and place them on a wire rack to set
Once the glaze has set, use a piping bag with a narrow tip to fill each doughnut with apple butter
Insert the tip into the side of the doughnut and squeeze a small amount of apple butter inside
In a shallow bowl, mix together granulated sugar and ground cinnamon
Roll each filled doughnut in the sugaring mixture until well coated
Serve the apple cider doughnuts fresh and enjoy
