Ingredients:
- 1 can 15 oz chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 1/4 cup tahini
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1 large zucchini, cut into fries
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions:
Preheat your oven to 425F 220C and line a baking sheet with parchment paper
In a food processor, combine the chickpeas, minced garlic, tahini, olive oil, lemon juice, salt, and white pepper
Blend until smooth and creamy
Transfer the hummus to a serving bowl and stir in the grated Parmesan cheese, shredded mozzarella cheese, chopped basil, and chopped sun-dried tomatoes
Mix well
In a separate bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper
Mix thoroughly
Dip each zucchini fry into the hummus mixture, coating it evenly
Then roll the coated zucchini fry in the breadcrumb mixture, pressing down to adhere the breadcrumbs
Place the coated zucchini fries on the prepared baking sheet, making sure they are evenly spaced
Lightly spray the fries with cooking spray
Bake in the preheated oven for about 20-25 minutes or until the zucchini fries are golden brown and crispy
