Ingredients:
- 4 chicken breasts, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can 14 oz diced tomatoes
- 1 can 14 oz coconut milk
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
In a slow cooker, combine diced chicken, chopped onion, minced garlic, diced bell pepper, diced tomatoes, and coconut milk
Stir in curry powder, ground cumin, ground coriander, salt, and pepper
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender and flavors are well blended
Serve over cooked rice or with naan bread, garnished with fresh cilantro
