A refreshing and vibrant spring pea salad with a surprising hint of vanilla, perfect for a light and flavorful side dish.
Ingredients:
- 2 cups fresh spring peas
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh mint
- 1 tablespoon olive oil
- 1/2 teaspoon vanilla extract
- Salt and pepper to taste
- 1/4 cup sliced almonds toasted
- 1 lemon zested and juiced
Instructions:
Fresh spring peas, crumbled feta cheese, and chopped fresh mint should all be put together in a large bowl
Mix the vanilla extract, salt, and pepper with a whisk in a small bowl
Pour the dressing over the salad and toss it around to cover everything
Toast some almond slices and sprinkle lemon zest on top of the salad
Just before you serve the salad, squeeze some fresh lemon juice over it
Toss the salad one more time, and then serve right away
