Ingredients:
- 1 block extra firm tofu, pressed and cubed
- 1/4 cup lime juice
- 2 tablespoons tequila
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon agave syrup or maple syrup
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions:
To make the marinade, mix the garlic, agave syrup, smoked paprika, chili powder, salt, and pepper in a small bowl with a whisk
Add the lime juice soon after
Put the tofu cubes on skewers and set them in a shallow dish
Make sure the tofu skewers are well covered with marinade by pouring it over them
Put it in the fridge with the lid on for at least 30 minutes to marinate
Warm the grill up to a medium-high level
Take the tofu skewers out of the marinade and throw away the extra marinade
Tofu skewers should be cooked on the grill for 5 to 7 minutes on each side, or until grill marks show up and the tofu is warm all the way through
Take it off the grill and add some chopped fresh cilantro on top before serving
