Ingredients:
- 4 large eggs
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1 teaspoon lemon zest
Instructions:
Preheat your oven to 375F 190C
In a skillet, heat the olive oil over medium heat
Add the minced garlic and saut for about 1 minute until fragrant
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes
Season with salt and pepper to taste
Create 4 small wells in the spinach mixture with a spoon and carefully crack an egg into each well
Sprinkle grated Parmesan cheese over the eggs and spinach
Drizzle lemon juice over the top
Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the egg whites are set but the yolks are still runny
Remove from the oven, garnish with lemon zest, and serve immediately
