Ingredients:
- 2 cups corn kernels fresh or frozen
- 1/2 cup red onion, finely diced
- 1/2 cup red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup crumbled queso fresco cheese
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
In a large bowl, combine corn, red onion, red bell pepper, cherry tomatoes, and cilantro
In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper
