Ingredients:
- 1 lb beef stew meat
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 cup beef broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup quick-cooking grits
- 2 cups water
- 1 cup shredded cheddar cheese
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the bell pepper, onion, and garlic
Cook until it gets soft
Put in the beef stew meat and brown it all over
Beef broth, chili powder, cumin, salt, and pepper should all be stirred in now
Lower the heat, cover, and cook for one and a half hours, or until the beef is soft
In a different pot, heat water until it boils
Turn down the heat and stir in the grits
Stir every now and then for 5 minutes
Take it off the heat and mix in the cheddar cheese shreds until they melt and become creamy
Put the grits on a plate and top them with the spicy stewed beef
