Ingredients:
- 1 can of black beans, drained and rinsed
- 2 cups of fresh greens such as spinach or kale
- 1/2 cup of diced onion
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1/4 cup of fresh cilantro leaves
- 8 small tortillas
Instructions:
Place the pan on medium heat
Put the black beans that have been drained and the diced onion in the pan
After two to three minutes, the onion should be clear and the beans should be warm all the way through
Follow the directions on the tortillas package to warm them up in a separate skillet or the microwave
Put some fresh greens on a tortilla to start putting together each taco
Put the black bean and onion mix on top of the greens
Add fresh cilantro leaves and slices of avocado on top
Put wedges of lime on top of the filling
Cut the tortilla in half and serve right away
