Ingredients:
- 1 cup dried lentils
- 1/2 cup farro
- 6 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tablespoon turmeric powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper optional
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Juice of 1 lemon
- Fresh cilantro or parsley, for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Cut up the celery, onion, carrot, and garlic and add them
For about 5 minutes, or until softened, saut
Spice it up with cayenne pepper, cumin, coriander, and turmeric
Stir the food all the time for another minute
Dry lentils, farro, and vegetable broth should all be added
Bring to a boil, then lower the heat and simmer for 25 to 30 minutes with the lid on half of the time until the lentils and farro are soft
Add pepper and salt to taste
Add the lemon juice and stir
Add fresh cilantro or parsley on top and serve hot
