Weight Watchers Broccoli Cheese Soup

A healthier version of broccoli cheese soup, this recipe is perfect for those following the Weight Watchers program. Its creamy, cheesy, and comforting without sacrificing flavor.

Ingredients:

  • 4 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk
  • 1 cup reduced-fat shredded cheddar cheese
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions:

In a large pot, saut onion and garlic until softened

Add broccoli florets and chicken broth

Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10-15 minutes

In a small bowl, whisk together almond milk and flour until smooth

Pour into the soup mixture, stirring constantly

Add shredded cheddar cheese, stirring until melted and soup is thickened

Season with salt and pepper to taste

Serve hot
